❇️ INGREDIENTS 1 cup Margarine (Butter is the best lakini sai bei, weuh!) 1 cup Icing sugar 2 cups All purpose flour 1 tsp Baking powder 1 tsp Corn starch 1 cup Dessicated coconut 2 tbsp coconut cream ❇️ INSTRUCTIONS * Toast coconut shavings in the oven for about 3 minutes. To brown. This's optional, but I find that it gives a richer flavor to the cookies and adds a lovely color as well. 1. Add melted margarine and icing sugar in a bowl, mix until the sugar dissolves. 2. Sift in flour, baking powder and corn starch. 3. Add dessicated coconut and mix with a spatula. 4. Add coconut cream, then mix roughly with your hands for a few minutes until no flour is seen. The dough should be crumbly like that of apple pies. 5. Refrigerate for 30 minutes. 6. Remove from the fridge, scoop and shape with your hands. 7. Coat each with not toasted dessicated coconut. 🔥 Bake in a preheated oven at 180° for 20-25 minutes or until cooked. Remove and leave on a rack to cool down completely. Place in a cookie jar to retain the crunch, ENJOY!!! 😋😋 . . .
